cups Original Bisquick® mix

cup granola
1/3
cup raisins
2/3
cup milk
2
tablespoons honey
Additional honey, if desired

Directions

  • 1 Heat oven to 400ºF. Grease bottoms only of 12 regular-size muffin cups, or place paper baking cup in each muffin cup.
  • 2 Beat egg slightly in medium bowl. Stir in Bisquick, granola, raisins, milk and 2 tablespoons honey just until moistened. Divide batter evenly among muffin cups.
  • 3 Bake about 15 minutes or until golden brown. Immediately remove from pan. Serve warm with additional honey.

Greasing the bottoms only of muffin cups produces nicely shaped muffins that have no rim around the edges.

Sprinkle with coarse decorating sugar before baking if desired.

For evenly shaped muffins, use a spring-handled ice-cream scoop to fill muffin cups.

I had some KashiGoLean that had been on the shelf too long - specifically looked for recipe to use it. This was it. Just added a little allspice. Hubby wasn't too fond, but I ate a couple for breakfast with (I Can't Believe It's Not)Butter for next few mornings. Kept well in a zip lock bag. I liked the texture. I have another cup of cereal left, so will make it again soon, plus a little to make streusel topping, mixed with some brown sugar, probably, and maybe nutmeg or cinnamon.

I substituted Kashi Go Lean cereal, dried cherries and Heart Healthy Bisquick in this recipe. The muffins came out quite tasty! They are biscuit-like, but low in calories (120) and fat (2g) with the substitutions. I''ll definitely make them again.

Dry and tasteless - not very good at all. At the very least, they needed more sweetening - perhaps that would have made them a bit more appealing.
