cup fruit preserves (any flavor)

cup powdered sugar

to 4 teaspoons water
  • 1 Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • 2 In medium bowl, stir milk, oil and egg until blended. Stir in Bisquick mix and granulated sugar just until moistened. Divide batter evenly among muffin cups. Drop 1 level teaspoon fruit preserves onto center of batter in each cup.
  • 3 Bake 13 to 18 minutes or until golden brown. Cool slightly; remove from pan. In small bowl, mix powdered sugar and water until smooth; drizzle over warm muffins.

Expert Tips

Substitute 2 egg whites or 1/4 cup fat-free egg product for the egg. Use fat-free (skim) milk and Bisquick Heart Smart® mix.

These were pretty good and well received by all I have made them for. They are SUPER easy to make. I used the Heartsmart Bisquick and I used seedless blackberry and strawberry jam. The best results I got were when I put about 1/3 batter, jam, then the other 2/3 batter. It kept the jam from bubbling over and making a sticky mess.

Very Good Indeed! Firstly, to get that "fruit-filled" effect you probably should fill the cup half way, add preserve then top with batter. Tried it as the recipe suggests and was left with a puddle of blackberry preserve at the top. Also didn't have milk on hand so I used a mixture of evaporated milk and water and the muffins came out really soft!!! Good recipe!!!

well they tasted ok in the end but the fruit did not go to the middle of them like the recipe said it bubbled all over the place and now I have to clean my oven.
