cup uncooked regular rice

medium onion, chopped (1/2 cup)

tablespoons vegetable oil

can (8 ounces) tomato sauce

small green bell pepper, chopped (1/2 cup)

teaspoons salt

teaspoon chili powder
1/8
teaspoon garlic powder
  • 1 Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender.
  • 2 Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.

Expert Tips

Out of garlic powder? If you have garlic salt on hand, use it instead. Decrease regular salt to 1/2 teaspoon, adding more if needed when the dish is done.

Turn this great side dish into an easy main dish by adding a pound of ground beef, sausage or turkey, cooked and crumbled.

Great dish... very easy and quick my 7 year old favorite!!!! I fry up some pork chops until they are almost done make the rice as directed add a can of diced tomatoes (with the juice counting in the 2 and a half cups of water) submerge the pork chops back in the rice mixture and cook as directed! Super easy main dish!

My husband and I LOVED the rice. This was my first time making it and what a breeze it was. The only thing I say is watch the rice while it is cooking, because mine was finished in 20 minutes from simmering (like normal rice though) instead of the 30 minutes that the recipe suggests. This tastes so--- much better than store bought packaged Spanish Rice. Will make again!!! I paired this with the cheesy chicken enchiladas, also yummy!!!

this recipe is ez ez ez!! you can make it variable, less salty, with bell pepper or without. if you keep small cans of tomato sauce in your cupboard, you can add this as a side dish quickly or add leftover chicken to make a tasty leftover meal.
