Ingredients

pound bulk pork sausage

medium onion, chopped (1/2 cup)

cup pistachio nuts, chopped
1/2
teaspoon curry powder
1
garlic clove, finely chopped
2 1/4
cups water

tablespoons butter or margarine
1
tablespoon chopped fresh parsley
1/4
teaspoon salt
1 1/2
cups uncooked couscous

Directions

  • 1 Cook pork, onion, nuts, curry powder and garlic in 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink; drain.
  • 2 Stir in water, butter, parsley and salt; heat to boiling. Stir in couscous; remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Fluff with fork.

I have loved this recipe for years. However, I double or triple the curry powder and the garlic and add 1 tsp paprika. Also, I use Israeli couscous (the larger, pearl variety) and the liquid is half chicken stock. Chopped pecans work really well, too. You can also add some veg, to make it a complete meal.
