uncooked lasagna noodles (12 oz)

cup chopped green bell pepper

cup chopped onions (1 1/2 medium)

cup milk

cans (10 3/4 oz each) condensed cream of chicken soup

teaspoon dried basil leaves

teaspoon pepper

container (12 oz) small-curd cottage cheese
3
cups diced cooked chicken
2
cups shredded mozzarella cheese (8 oz)

cup shredded Cheddar cheese (4 oz)

cup grated Parmesan cheese
  • 1 Heat oven to 350°F. Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain noodles as directed on package.
  • 2 Meanwhile, in 2-quart saucepan, melt butter over medium-high heat. Cook bell pepper and onions in butter, stirring occasionally, until crisp-tender; remove from heat. Stir in milk, soup, basil and pepper.
  • 3 Place 4 noodles in baking dish. Top with about 1 cup of the soup mixture, half of the cottage cheese, 1 1/2 cups of the chicken, 2/3 cup mozzarella cheese and 1/3 cup Cheddar cheese. Repeat layers once, starting with noodles. Place remaining 4 noodles over top. Top with remaining soup mixture, mozzarella cheese and Cheddar cheese. Sprinkle Parmesan cheese over top.
  • 4 Bake uncovered 50 to 55 minutes or until bubbly and hot in center. Let stand 15 minutes before cutting.

Expert Tips

Ricotta cheese can be substituted for the cottage cheese.

If you don't want to cook chicken for this recipe, your supermarket offers these options: deli roasted chicken, frozen diced precooked chicken and canned chicken breast chunks.

I read the other reviews before trying this recipe that said the recipe was bland, but I didn't think it was bland at all! I made it exactly as the recipe called for with the exception of cooking some minced garlic with the onions and peppers. Mine, also, was not watery as other had stated, however, I did let it sit and cool for 15 to 20 minutes before serving. To save some time, I used canned chicken breast meat, and I was going to use oven ready lasagna noodles but I grabbed the wrong kind while shopping. My husband and I both think it the leftovers tomorrow will be even more tasty once the flavor sit and mingle for a bit. I will definitely make this again!

This is the perfect mix of a hearty, comforting chicken pot pie, and the tanginess of the parmesan cheese. When you smell it your mouth waters and you can't wait to dig in! Super easy to make and a crowd pleaser. Have made it many times and shared the recipe to everyone I know.

This was good. After reading other reviews I did tweak the recipe a bit. I used one can of crm chicken soup and one can cream of mushroom. I added alfredo seasoning to the soup mixture and the whole thing turned out wonderful. I actually did not cook the noodles before making the casserole (some said the recipe was too time consuming) and they turned out great. The sauce was not thin but likely because the noodles absorbed that extra liquid. It was a nice change from the traditional red sauce lasagna.
