This is a favorite now! Very easy and good. I, too added cheese. I sometimes sub hashbrowns for the potatoes. Depending what I have on hand (leftover) I'll throw in mushrooms, roasted red peppers, spinach or tomatoes.

Brilliant recipe- reminds me a bit of Spanish omelette. I like adding cheese to it too or using, eg, sausages.Not just a breakfast menu; good on a cold day.

This is right up my alley. I have made something similar to this only using scrambled, cooked sausage. Then pour sausage gravy over each serving. We have breakfast for lunch/supper a lot. This is the kind of food that sticks to your ribs, hips, etc. LOL
