cups diced cooked chicken

can (15.5 oz) pinto beans, drained, rinsed

cup Old El Paso® Thick 'n Chunky salsa (from 12-oz jar)

teaspoons chili powder

teaspoon garlic powder

loaf (16-oz size) prepared cheese product, cut into cubes

cup Original Bisquick® mix
3/4
cup milk

tablespoons butter, melted
1
cup shredded lettuce
1
plum (Roma) tomato, diced (1/2 cup)

medium green onions, sliced (1/4 cup)
  • 1 Heat oven to 425°F. Spray round 2-quart casserole or 11x7-inch glass baking dish with cooking spray.
  • 2 In large bowl, mix chicken, beans, salsa, chili powder and garlic powder; stir in cheese. Spoon into baking dish. In small bowl, mix Bisquick mix, milk and butter. Pour and spoon evenly over chicken mixture.
  • 3 Bake 30 to 35 minutes or until crust is golden brown. Top with lettuce, tomato and onions. Serve with guacamole, sour cream and pickled sliced jalapeño chiles, if desired.

I tried this one with leftover rotisserie chicken. It had a really good flavor, but the only thing is that the recipe as is tends to be dry. I will definitely try this one again, but will add a can of chicken broth to the mixture before baking, and a little more of the salsa. Very tasty.

Excellent Dish!! I had some left over chicken breast from another BC receipe and I decided to try this one. I used a can of pinto beans with jalepenos which added a lot... it wasn't too spicy at all. I also substituted shredded cheddar cheese as we don't like processed cheese.... worked great! I topped it with the suggested toppings, sour cream and sliced black olives. I will definitely make this one again!
