cup vegetable oil

cups Gold Medal® all-purpose flour

teaspoons ground cinnamon

teaspoon baking soda
1
teaspoon vanilla
1/2
teaspoon salt
1/4
teaspoon ground nutmeg

medium carrots, shredded (3 cups)
1
cup coarsely chopped walnuts
Cream Cheese Frosting
  • 1 Heat oven to 350ºF. Grease and flour bottom and sides of rectangular pan, 13x9x2 inches.
  • 2 Mix sugar, oil and eggs in large bowl until blended; beat with spoon 1 minute. Stir in remaining ingredients except carrots, walnuts and Cream Cheese Frosting; beat with spoon 1 minute. Stir in carrots and nuts. Pour into pan.
  • 3 Bake 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Frost with Cream Cheese Frosting.

THIS WAS AMAZING!.....if your looking for an amazing cake.....this is the one!....i didnt put walnuts in it and personally i liked it a lot better!

This carrot cake and frosting is a hit everytime I serve it. Stick with the recipe; don't think you know more than Betty and try to perfect it. This recipe is perfect just the way it is!

I had some carrots I needed to use up, and this was a good way to do it. I baked them in small loaf pans to give to people. I didnt use the frosting, and it made for a good snack/healthy dessert for work.
