Butter Pecan Chews

A decadent bar cookie, indicative of little pecan pies, these are truly rich and luscious. This recipe has been a family favorite for years and friends have requested an entire pan, just for themselves, as they are that good.

cups Gold Medal® all-purpose flour

tablespoons granulated sugar
3/4
cup butter or margarine, softened
3
eggs, separated
2 1/2
cups packed light brown sugar
1
teaspoon vanilla
1/2
teaspoon salt
1
cup chopped pecans
3/4
cup flaked coconut
2
tablespoons powdered sugar
  • 1 Heat oven to 375°F. Grease 13x9-inch pan with butter.
  • 2 In medium bowl, mix flour, granulated sugar and butter. Press mixture in bottom of pan. Bake 12 to 14 minutes or until light brown.
  • 3 Meanwhile, in large bowl, beat egg yolks, brown sugar, vanilla and salt with electric mixer. Stir in pecans and coconut. In small bowl, beat egg whites with electric mixer until foamy. Fold into egg yolk mixture.
  • 4 Remove partially baked crust from oven. Spread filling evenly over crust. Reduce oven temperature to 350°F.
  • 5 Bake 25 to 30 minutes or until deep golden brown and center is set. Sprinkle powdered sugar over bars. Cool on cooling rack. Cut into 6 rows by 6 rows.

After reading the reviews I altered the baking method to line the pan with foil and then butter it liberally. My edges were not overdone and the middle was set. The flavor is sooooo wonderful! The main reason to not make them is that it is so hard to stop eating them! My 4 year old grandson couldn't get enough of them either. This is a new favorite for sure! Thanks for posting!

Amazing!! Have made these a couple of times and will be making til the day I die. Get soooo many great comments. (Side note; Keep an eye on the edges more so than the center, they can get a bit tough, but still taste really good!).

Very, very rich and almost too buttery. How to you keep the corners and edges from getting too hard? I don't think I overbaked and interior is almost too soft. I used a metal pan; if using pyrex-type, would you lower the heat 25 degrees? I always seem to have trouble with the edges and corners of bar cookies getting too hard. Any suggestions?
