slices Italian bread, 1/2 inch thick

cup olive or vegetable oil

medium tomatoes, chopped (1 1/2 cups)

garlic cloves, finely chopped

tablespoons chopped fresh basil leaves

tablespoons small capers, drained
1/2
teaspoon salt
1/2
teaspoon pepper
  • 1 Heat oven to 375ºF.
  • 2 Place bread slices on ungreased cookie sheet. Drizzle 1 teaspoon oil on each slice bread. Bake about 8 minutes or until golden brown.
  • 3 While bread is toasting, mix remaining ingredients. Spoon tomato mixture onto bread slices. Serve at room temperature.

This is soo good! My first bruschetta,and I loved it. The flavor is so strong; every ingredient can be tasted in the mix. The capers add a surprising twist, too!

I LOVE this recipe! I use 3 Roma tomatoes, finely chop mined garlic, add a little bit more fresh basil and chop up the capers. I add some of the olive oil (previous review is right the better the oil the better the taste...NO VEGETABLE OIL!!!). I first followed the recipe and did the toast, but we like to let the flavors blend overnight, mix it up and eat it on saltine crackers.Easy, healthy snack.
