pound feta cheese

eggs, slightly beaten
1/4
cup finely chopped fresh or 1 tablespoon dried basil leaves
1/4
teaspoon white pepper

package (16 ounces) frozen phyllo sheets (18x14 inches), thawed

cup margarine or butter, melted
  • 1 Heat oven to 400ºF. Grease cookie sheet. Crumble cheese into small bowl; mash with fork. Stir in eggs, basil and white pepper until well mixed.
  • 2 Cut phyllo sheets lengthwise into 2-inch strips. Cover with plastic wrap, then with damp towel to keep them from drying out. Place 1 level teaspoon cheese mixture on end of 1 strip. Fold strip over cheese mixture, end over end in triangular shape, to opposite end. Place on cookie sheet. Repeat with remaining strips and cheese mixture. Brush triangles lightly with margarine.
  • 3 Bake 12 to 15 minutes or until puffed and golden brown. Serve warm.

Expert Tips

Finely shredded Monterey Jack cheese can be used for the feta cheese.

Cover and refrigerate unbaked triangles up to 24 hours before baking; bake as directed. Or freeze tightly covered up to 2 months; increase bake time by 5 minutes.

The hardest things that I have made. Had a very hard time with the phyllo dough, but it was good once it was done.

I actually forgot to defrost my phyllo dough, so my husband and I improvised. Instead, we had a french bread baguette that we sliced up. Then, we drizzled olive oil over the bread and put a scoop of the mixture on top. It didn''t make nearly as many that way, but our guests raved about how much they enjoyed the appetizer. I think we''ll make it this way in the future.

This was not good, not good at all! The flavor was ok, but not great. They were WAY too dry! With the prep that goes into this recipe, the end product was not worth it at all! I''m glad I gave these a test run before making them while entertaining. I would have been very embaressed!
