cup quick-cooking or old-fashioned oats

teaspoons baking soda

teaspoon baking powder
1 1/2
teaspoons ground cinnamon
1/2
teaspoon ground cloves
2/3
cup chopped nuts
2/3
cup raisins
Powdered sugar, if desired

Directions

  • 1 Heat oven to 350ºF. Spray rectangular pan, 13x9x2 inches, with cooking spray.
  • 2 Beat egg, oil, buttermilk, bananas, granulated sugar and vanilla in large bowl. Stir in flour, oats, baking soda, baking powder, cinnamon and cloves. Stir in nuts and raisins. Pour into pan.
  • 3 Bake 30 to 35 minutes or until toothpick inserted in center comes out clean; cool. Sprinkle with powdered sugar.

doesn't take too long in preparation and cooking. Great taste of the final product. Don't let your over ripe bananas go to waste. Make this cake. I used whole wheat flour and oats (equal amounts) and brown sugar. A very healthy cake. Everybody loved it.
