cup Fiber One™ Complete pancake mix (from 28.3-oz box)

cup milk
1/4
teaspoon vanilla

small apple, very thinly sliced

teaspoons cinnamon-sugar
Maple-flavored syrup, if desired
  • 1 Heat oven to 400°F. While oven is heating, melt butter in 9-inch glass pie plate in oven.
  • 2 Meanwhile, in small bowl, beat egg with wire whisk or egg beater. Beat in pancake mix, milk and vanilla. Pour over melted butter in pie plate. Arrange apple slices on batter. Sprinkle with cinnamon-sugar.
  • 3 Bake 15 to 20 minutes or until edges are deep golden brown. Serve warm with maple syrup.

Top the warm-from-the-oven pancake with low-fat caramel topping and low-fat whipped topping.

This was good. I'm a Personal Trainer. I had company in town, so I was looking for something that tastes great, but is good for you. I subbed egg beaters for the egg, doubled the recipe (used only 3T of light Country Crock tub butter)and baked in a 9x13 pan. Baked for same cooking time as directed for the single recipe. It turned out great. Next time, I'll add a teaspoon of cinnamon to the batter itself. Oh!...and we topped it with spray butter and sugar free syrup and had egg beaters on the side for more protein.

Oh my goodness! This is the best idea for breakfast EVER! Love it... so easy, even I can do this one. I never turn on my big oven, so this is perfect for my small GE rotisserie oven that bakes, broils, toasts and warms..... 5 kudos for this recipe from me.
