Greek Tossed Pasta Salad

Feta, olives and tomatoes give a ready-in-30-minutes pasta salad its classic Greek inspiration.

1box Betty Crocker® Suddenly Salad® Caesar pasta salad mix
1/4cup water
3tablespoons vegetable oil
4cups torn romaine lettuce
2medium tomatoes, coarsely chopped (1 1/2 cups)
1small cucumber, coarsely chopped (1 cup)
1/2cup thinly sliced red onion, slices cut in half
4oz crumbled feta cheese (1 cup)
1can (2 1/4 oz) sliced ripe olives, drained

1.Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
2.Drain pasta; rinse with cold water. Shake to drain well.
3.In large bowl, stir together seasoning mix, oil and water. Stir in pasta and remaining ingredients. Toss with croutons and Parmesan topping. Serve immediately, or refrigerate.
High Altitude (3500-6500 ft): Make pasta mix following High Altitude directions on box.
Make the Most of This Recipe
Do-Ahead
Make the salad a day ahead, omitting the lettuce, croutons and Parmesan topping. Stir in these remaining ingredients just before serving.
Time-Saver
Purchase a bag of ready-to-eat torn romaine lettuce to save time.
Variation
It’s easy to make this a main-dish salad. Just add 2 cups cut-up cooked chicken, ham or crabmeat.
