Chicken Sandwich with White Bean and Pesto Spread

When time is tight, we turn to sandwiches. We love mixing things up spreads like this White Bean and Pesto Spread. It sounds fancy, but actually, it’s an incredibly easy thing to make. You will need a can of cannellini beans, a garlic clove, lemon juice, olive oil and some store-bought basil pesto.

Give the beans a rinse under cold water then throw them along with everything else into the bowl of a food processor. Pulse until smooth, season with a little salt and pepper and you’re done!

We usually make a batch then cover it tightly and keep in our fridge until we want an extra tasty sandwich. One of our favorite things to add to sandwiches is chicken breast. You can cook the chicken yourself or buy a rotisserie chicken from the store and shred it at home. 

Just spread a spoonful of the White Bean and Pesto Spread onto some whole grain bread topped with chicken breast and crisp cool lettuce. Wrap it up and you’re set with a filling, homemade lunch.
