America Sings Tonight! Party On with Prime-Time Pizza
If you and your friends are hooked on watching potential divas and crooners have a shot at superstardom, throw an impromptu weeknight viewing party. To keep it on a high note, serve easy-to-make homemade pizza. Friends and family will be singing your praises!
If you’re a crazed fan of a certain reality singing competition like me, what more do you need for an excuse to host a mid-week viewing party. Don’t let the fact that it’s on a weeknight scare you. With my simple pizza recipe, you’ll be able to serve a really quick and delicious hot dish and enjoy the show, too!
Homemade pizzas are a wonderful way to entertain. They’re inexpensive and you can control the ingredients to please your guests’ likes, dislikes, allergies and dietary restrictions.
Once you have a basic pizza recipe, mix and match the toppings to create your own personal masterpieces. Go ahead, get creative. I have a huge soft spot for caramelized onions on pizza. This is my favorite recipe…Caramelized Onion and Crispy Pancetta Pizza. Who can say no to crispy bacon or pancetta?
What is pancetta? It's an Italian-style bacon, cured with salt and a variety of spices, which may include pepper, nutmeg, other hot peppers, fennel, and garlic. It has a slightly salty flavor and, unlike it's American cousin, comes unsliced. If you don't have pancetta on hand, Canadian bacon is a perfect substitute.
Simply press your pizza dough onto a cookie sheet coated with cooking spray. Since there are only a few ingredients, you don't need a thick-edged crust. Brush with olive oil, sprinkle with caramelized onions and crispy pancetta, then top with cheese and bake.
The first time I made this recipe, it disappeared faster than most contestants from their singing audition. And it has super-quick prep, so you can spend most of your evening on the couch rooting your favorite up-and-coming singing stars, rather than in the kitchen.
