Who doesn’t like mac ’n cheese? I think if you asked most people, they would say it’s tops on their list for all-time favorite dishes. But if you didn’t think you could improve on such a classic dish, think again. My BLT Mac ’n Cheese is the best blend of creamy, cheesy and smoky yumminess. It combines all the goodness you love about mac ’n cheese and then adds the incredible flavor of smoky bacon, spinach and tomatoes.
It’s an awesome one-dish meal that is so satisfying for the whole family. It’s also a great way to get the kids to eat some veggies. Because let’s face it, anything tastes better when smothered in a cheese sauce, right?
I use two different kinds of cheese to give the dish a creamy texture and smooth flavor, but feel free to get creative and add any cheese you like.
I like to melt my cheese sauce in the microwave, but you can do it on the stovetop as well. While I’m making the cheese sauce, I prepare my pasta. I cook it 2 to 3 minutes less than the box’s recommended cooking time because the pasta will cook more in the oven.
I combine the sauce, pasta and some shredded cheese in a casserole dish and fold in fresh spinach and cherry tomatoes. Then just cover and bake! As a final touch, I top the casserole with crumbled bacon and Panko bread crumbs and then brown it under the broiler. This gives it so much flavor and texture.
