Looking like “white carrots,” parsnips are a root vegetable only recently becoming more popular with the popularity of roasting vegetables. Two “snips” to share: Peel parsnips because they are often covered with a protective wax coating, and be careful not to overcook because parsnips could become mushy.
How to Buy
Choose firm, nicely shaped, unblemished parsnips that are not too wide.
How to Prepare
Scrape or peel. Leave whole, or cut into halves or fourths or 1/4-inch slices or strips.
How to Cook Conventionally
Boil: Whole or halves-covered 10 to 15 minutes or until tender. Slices or strips-covered 7 to 9 minutes or until tender.
Steam: Whole or halves-covered 15 to 20 minutes or until tender. Slices or strips-covered 8 to 10 minutes or until tender.
How to Microwave
Slices or strips-Place in 1-quart microwavable casserole; add 2 tablespoons water. Cover. Microwave 5 to 6 minutes, stirring once, until tender. Let stand 2 minutes.
