This long, cylindrical, green-skinned fruit of the gourd family has edible seeds surrounded by a mild, crisp flesh. Commonly referred to as “cukes,” their thin skin, unless waxed, does not require peeling.

How to Buy

Choose firm, dark green cucumbers.

How to Prepare
 
Wash cucumbers just before using; peel if desired. Cut into 1/2-inch slices or 1/2-inch pieces.

How to Cook Conventionally

Steam: About 5 minutes or until crisp-tender.

How to Microwave

Do not add water. Microwave 4 to 5 minutes or until crisp-tender.

How to Store

Store whole cucumbers, unwashed, in a plastic bag in the refrigerator up to 10 days. Refrigerate cut cucumbers, tightly wrapped, up to 5 days.
