Eggnog Pancakes

Ingredients

Stewed Apples

cup water

cup packed brown sugar

teaspoon ground cinnamon

medium Granny Smith apples, peeled and sliced thin

Pancakes

cups Original Bisquick™ mix
1 1/2
cups eggnog
1/2
teaspoon ground nutmeg

    In 3-quart saucepan, heat water, brown sugar and cinnamon over medium-high heat. Stir until sugar is dissolved and mixture begins to boil. Reduce heat, and add apples. Cook uncovered about 20 minutes or until apples are softened.

    Stir together pancake ingredients until blended. Pour slightly less than 1/4 cupfuls batter onto hot greased griddle. Cook until edges are dry. Turn; cook until golden.

Expert Tips

  • For additional flavor, spike your pancakes. Add 2 tablespoons brandy or bourbon to the batter.
  • The eggnog taste is not overwhelming. Traditional toppings, like maple syrup or cinnamon and sugar, still go well with these pancakes.
