I just made a triple batch as a side dish for a work party. Wow... what a beautiful color and flavor combination. I always enjoyed peeled-n-sliced boiled beets then glazing with honey, but the idea of roasting them with carrots and adding balsamic vinegar to the honey glaze was the missing link. The carrot, beet & honey-balsamic reduction is so rich and full of tangy sweet flavors... it is one of my new healthy favorites. Thanks Julie, and Betty Crocker!
