Picture yourself on a grassy spot under a tree, in a gently rocking boat on the water or on a blanket on a warm, sandy beach. These places are perfect settings for a picnic. With these supremely simple tips, you can pack up a perfect outdoor meal!
- Avoid anything with mayonnaise (which may spoil in the heat) and choose oil-based vinaigrettes for pasta or potato salads and for sandwiches.
- Tote plenty of water along with other drinks. Freeze a favorite juice and pack that in a thermos so that it melts into a cool slush.
- Keep the menu simple. Along with fresh cut-up fruit and an easy-to-eat salad, a good sandwich will make the meal. Here is a recipe for the classic Vietnamese banh mi, which offers a balance of cold cuts, spicy pickles and fresh cilantro. It’s a cinch to make and travels beautifully. In fact, it tastes better after it’s had a little time to allow the flavors to marry. All you need is a light, airy baguette with a delicate crumb that frames the sandwich and softens as the ingredients meld together. Layer in a lot of imagination.
