Awesome dish!! Will be make it again ,family loved it..I didnt have rotisserie chicken, so i baked chicken thighs with paprika..They I added it to the rest of the dish and let it simmer a little before serving .

Very tasty and easy dish which is good for me because I have 3 toddlers and dinner needs to be made in a short amount of time. Instead of chorizo, I used chicken sausage, which was very tasty.

Great recipe and a hint for those who must reduce fat intake or who cannot eat pork ... there is a marvelous chorizo substitute called "Soyrizo". Tastes like the original ( use it when making Chorizo and Egg omelets and my husband has never noticed the difference.

This dish is quite simple to make, and even with small mods it's very tasty. Ex: They didn't have any rotisserie chicken at the store left, so I used what frozen chicken breasts I had at home, baked them, and threw som Emeril's Essence on them for the flavor it would have lacked from not being rotisserie style. It did take longer than 30 mins to make, but everyone in the house enjoyed it, which is nice, b/c now the tasty leftovers have no chance of going to waste.
