I love this recipe! I've made it several times; it's something I can feed my vegetarian in-laws and everyone likes it. If you don't want to call it a Reuben, call it a grilled vegetable sandwich. The only change I made was to cook sliced fresh red bell peppers with the onions rather than using jarred peppers -- works better for me.

I am glad the recipe wokerd out for you :) I am not sure if I mentioned it before, but I always premix a large batch of the seasonings and put them in a jar. When I make my chicken, all I need is the butter, olive oil, chicken stock and lime.

This sandwich lacks any substance - just because it's vegetarian doesn't mean you take the meat out of the recipe and its a meal. Why not try adding a grilled portobello mushroom to give it substance and style?
