Recipe sounds yummy! I am so excited to try this one. As for the issue about the carbs...there are plenty of substitutes for bread crumbs, which I'm sure most of the carbs come from. There's always the option to make your own crumbs using low carb bread, or replace it with crushed nuts (pecans, almonds...), or just cut out some of the crumbs and use something like parmesan cheese to replace the other half. When you want to cut carbs there are a lot of options on this recipe.
