You need to make this salad a couple of days in advance. If you eat it after an hour it's bitter. I also added an sweet onion to give it more flavor.

This recipe sounded promising, but it really lacked punch and had too much corn and not enough slaw. Maybe it will be better after a night in the refrigerator, but I doubt that I would make this one again.

I have useed this recipes several times for gatherings and it's always requested by everyone. I modified the recipe a bit. I use thawed frozen corn instead of canned, chopped fresh red bell peppers and some green onions. I like the addition of some fresh vegetables, it adds to the reipe. This is a 5 star keeper.

This salad is wonderful. Very light and fresh. Nice change from most salads people bring to dinners. I used fresh herbs from my garden and it just popped in your mouth! Delicious.

This was a great hit this last weekend. Absolutely yummy!!! I used the corn that also had beans in it, even better! The extra jalapeno for a little crunch and spice is right on the money.

I highly recommend this coleslaw. It has a wonderful bright and refreshing taste that is great for a summer meal. I served this on the Forth of July with brats and burgers, and everyone loved it!

We really enjoyed this coleslaw variation. Next time I make it (and I definitely will make it again), I will use a little less cilantro. It is a great change from the mayo-type slaw.
