I impressed many people at my church with these cookies. They are easy enough that I will be making them again and again. If you like coconut, you must try this recipe!

These cookies are fantastic. They are my husband's new favorite cookie. I've never used the parchment paper but it made it so simple to remove the cookies. I just flipped it over and used it one more time. I over baked one cookie sheet but the cookies still tasted great. A real winner.

VERY EASY! I don't even like coconut and only made these for a friend, but now they are a fav of mine. All my friends love them and always asks me to make more. The chocolate drizzle was too hard for a novice like me, but the cookies are super delicious without them. Use parchment paper or Reynolds Release when baking them and WATCH OUT... they do burn pretty quickly, but they are oh so moist when baked just right.

Hey All! ~Just a little tip about the chocalte drizzle~ I love baking, and have tried every way known to get the perfect chocolate drizzle topping to be smooth. Here's how- put the chocolate chips and butter in a (metal) bowl, then take the bowl and put in a shallow pan of water and heat (stirring often) till it's that grainy consistency, then... and here's the secret... add a splash of milk! Go with your gut and add little by little. Remember, you can always add more, but it's hard to take away. This will make your chocolate smoooooth like glass and very easy to drizzle! Don't forget to put the whole baking sheet in the fridge or freezer for a little bit as soon as your done to help set the drizzle topping. Happy baking everyone!!!

WOW!!!!!! These cookies are so good and SOOOO) easy. We tend to like cookies without icing, so we tasted them plain and thought they could not be improved by the drizzled chocolate, therefore I omitted the chocolate. Here are some tips on baking cookies. Have two cookie sheets and cover each one with parchment paper. While one is baking, prepare the other sheet. After removing the cookies from the first pan, throw the pan & parchment paper in freezer for 1 - 2 minutes to chill. This will keep your batter from spreading when putting next batch on pan. I also keep the bowl of batter in fridge in-between batches. I have been baking cookies for years for my family, kids and grand-kids and have always used this method. I learned early that a hot pan melts the batter.

BIG HIT!! Everyone loves these cookies (especially me and my grandma). I made them for Christmas last year and will make them again this year. The recipe is really easy to follow and they bake quick. Believe me if you love coconut, they are worth the effort. Compare the taste to Girl Scout's Samoas. LOVE LOVE LOVE this recipe!

Mmmmmm...These cookies were super easy to make and they turned out just like the picture. Be sure to use parchment paper as the cookies pop right off. My mom doesn't even like coconut, but she liked these. I brought them to work and they loved them and wanted the recipe. The glaze didn't get smooth or runny enough to drizzle over the cookies, though. I needed to add more butter.

WOW!! This was a super EASY recipe to follow and believe me, I can totally make a disaster out of one. It needed very few ingrediants and tasted wonderful. It was sweet, but not too sweet and definitely tasted homemade. I made this for my recent cookie swap and it was a big hit. It went so fast that I made up another batch later on in the week for hubby and kids. I didn't have parchment paper, but instead used my handy dandy Silpat. Worked like a charm. This is definitely a receipe keeper. Thanks!
