pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix

cup butter or margarine, softened

egg

cup dried cherries, coarsely chopped
1
cup semisweet chocolate chunks
1
cup salted dry-roasted pistachio nuts, coarsely chopped
  • 1 Heat oven to 375°F. In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in cherries, chocolate chunks and nuts.
  • 2 On ungreased cookie sheets, drop dough by heaping tablespoonfuls (or use level 3 tablespoon-size scoop) about 2 inches apart.
  • 3 Bake 10 to 12 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely.

This recipe was to die for!! Ive incorporates dark chocolate chips instead of the chunks and used marschino cherries (drained, rinsed, chopped, and blotted dry with paper towels) in the dough. These came out wonderful and were still moist and delicious the next day!! This will definitely become a regular in my home especially around the holidays!! Yum!!!!!!

I just had some good spumoni icecream for dessert at a popular Italian place. So when I saw this I had to try it. I added chopped maraschino cherries, because thats what was in the icecream. I added a little flour because the cherries added moisture and made the dough sticky (and kind of pink.) They turned out great! Next time I will keep the pistachios whole and only cut the cherries in half to keep it chunky like the icecream! Most original cookie ever!

I made these cookies using pecans in place of pistachios. They were delicious. I also used chocolate chips in place of the chunks and think the chocolate was still a little overpowering. All in all, they were delicious! Very easy to make.
