pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix

cup butter or margarine, softened

egg

cup dried cherries, coarsely chopped
1
cup semisweet chocolate chunks
1
cup salted dry-roasted pistachio nuts, coarsely chopped
  • 1 Heat oven to 375°F. In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in cherries, chocolate chunks and nuts.
  • 2 On ungreased cookie sheets, drop dough by heaping tablespoonfuls (or use level 3 tablespoon-size scoop) about 2 inches apart.
  • 3 Bake 10 to 12 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely.

I just had some good spumoni icecream for dessert at a popular Italian place. So when I saw this I had to try it. I added chopped maraschino cherries, because thats what was in the icecream. I added a little flour because the cherries added moisture and made the dough sticky (and kind of pink.) They turned out great! Next time I will keep the pistachios whole and only cut the cherries in half to keep it chunky like the icecream! Most original cookie ever!

I made these cookies using pecans in place of pistachios. They were delicious. I also used chocolate chips in place of the chunks and think the chocolate was still a little overpowering. All in all, they were delicious! Very easy to make.

I've made these twice. Love them! Had a man that use to own a bakery tell me they were the best cookies he ever had. Next time I make them I'm going to use more cherries and nuts and less chocolate, maybe chocolate chips. The chocolate can over power the taste of the cherries and nuts. You want to be able to taste the cherries and nuts or all you'll have is a chocolate chip cookie.I found the shelled pistachios at KROGER and COSTCO.
