This was an excellent dish! all the flavors really complimented each other and nothing over-powered the other ingredients. Despite that, my chicken did turn out a little bit dry so I dipped in some ranch and that did the trick!

My husband loved this recipe! I did not use bacon but olive oil instead to cook the onion. Also, used 3 large chicken breasts ~ this was so easy! I'm going to try with brocolli for tonight's dinner. Delicious; enjoy!

This is absolutely delicious! I used three large chicken breasts instead of 6 small. When the chicken was done, I removed it from the pan and thickened the pan drippings with a bit of cornstarch and water. I spooned this over the chicken and served with toasty garlic bread. FANTASTIC!

Awesome recipe!! My family liked it - even the kids! Instead of egg, I subbed in onion & chive cream cheese & it was simply incredible - the extra "stuffing" was used by some to top the fresh beans we made with it & others used the extra to put on top of the part of the chicken breast that didn't get stuffed. HIGHLY recommend this one! :)

I've been looking for a good stuffed chicken breast recipe for a LONG time, and when I found this one I knew this was it! This was DELICIOUS! This was definitely more time consuming for me (WAY more than the 55 minutes it estimates as "total time"), but well worth it. I actually used chopped up broccoli florets instead of spinach and it was amazing. The bacon added such a nice smokey flavor to this meal. I served this over couscous and it was a perfect meal. My boyfriend usually goes for seconds but I made sure to stuff his chicken breast with extra filling and he was full after his first plate! Will definitely make again :)

This is now a standard at my house. It adds lots of flavor to bland ol' chicken breasts. I did, however, omit the thyme. It added a "whang" to the filling that was off-putting. Now I sub a bit of nutmeg because it goes so well with spinach. This is a good "go to" dish for company, because it looks like a lot of trouble... and everyone likes to feel fussed over. ;)

This recipe seemed very promising, but turned out horribly! Even my husband who will normally eat anything didn't like it. This is not something I would recommend or will ever make again.
