Love this! We served it with the Cuban Pork Chops and liked both. We're not big on peppers but I coarsely chopped some cilantro and topped the beans and rice... yummy!

Really loved this. Only changes I made were using brown rice and I added a little homemade vegetable broth to the combo when it was cooking. Yummy. Thanks!

I made this for a dinner party and it was a total hit! I served it on its own, with sour cream and guacamole on the side. It's very flavorful and it's so easy to make, I know it'll become one of my regular recipes!

I made this today and it was easy and flavorful. My eleven year old son cleaned his plate. I added a little green onions along with the red bell pepper and it was wonderful. I made it with shrimp in a butter and garlic sauce and talapia fish.
