Whipping up a great pasta salad while the meat is grilling is easy with Suddenly Salad. Just toss in your favorite veggies, stir and voilà!

I had some extra boxes of the Classic Suddenly Salad in the cupboard and found this recipe as a means to use them up. It's fantastic. Per the suggestion, I added black beans, cooked chicken, and shredded cheese. An earlier reviewer is correct - leaving the corn frozen and adding it in at the end is the way to go. This recipe is very flavorful without being overwhelming.

Made this today for lunch and it was yummy. I added a cut up cucumber instead of the broccoli. Also, instead of frozen corn I used fresh corn cut off the ear and grilled on stove top for like 10 mins. I added the 1/2 cup black beans and some grilled chicken. This recipe is a keeper!

My family really enjoyed the recipe. I used the chili powder as suggeted, but also sprinkled it across the top. I did not cook the corn (used it raw and frozen, it helped chill the salad quickly) and also added the black beans. It was a hit, so much so that I am forwarding the recipe to others! :-)

I'm always very guilty of experimenting with recipes or using them only for ideas so...I fixed the Suddenly Salad mix as it says, but to make it quick and more of a "main dish" I chopped up and added a grilled chicken breast I had saved from a meal we had the day before, plus some black olives and cheese. I served this on a plate and put scoops of the chicken pasta beside torn romaine lettuce with a little dressing of choice drizzled on it and a dinner roll. My husband loved it and so did I.
