This was abolutely awesome! I added more avocado and did not use corn at all. It was a hit at my house. Its actually better the day after, so make it the day before you need it for the best flavors!

I've eaten this salad several times and it just gets better. A can of drained wk corn can be used, and in a pinch, dried cilanatro will work. Since I can't eat pepper jack cheese, I use either sharp cheddar or four cheese Mexican blend. The blend seems to be a bit toned down from the cheddar. If you have to sub, then do so for your own family's taste, of course. No recipes are written in stone; they are, however, great building blocks. Sometimes you get one so good in it's original form, that no changes are called for. That's a good thing! Off my soap box now. I hope anyone else who tries this recipe will enjoy it as much as I do.
