I really liked it, but we made several adjustments to it. I added ground beef, omitted the creamed corn and added another two cups of cheese. Victoria88, remember these recipes are good stating point and eventually you have to make each dish your own. Don't give up just add more cheese!

This is a great dish for pot lucks. I always increase the pasta, cheese, milk, and salsa. I also use my favorite salsa instead of the recommended due to person preference. It is easy to reheat, and makes great leftovers.

This is a response to lyneb. The measurements you did not understand means it calls for 2 full cups of macaroni PLUS 1/3 of a cup making 2 1/3 cups of macaroni..The 1/2 means it calls for 1 full cup PLUS 1/2 cup equaling 1 and 1/2 cups of milk.Perhaps a cookbook explaining measurements could help.

It's so cheesy. I loved this dish. Sometimes macaroni can get boring, but with the southwest flavors and the corn, this was a hit. It was surprisingly filling, too.

I felt there was two much corn in the recipe and it made a huge batch. Overall, it was rather bland. I was surprised, as I had thought it would be "cheesy." Would not make again.

I really liked this variation of the usual, plain old mac and cheese, although I did make some adjustments. I preboiled the pasta, using only 1 cup of milk when simmering the mixture. I also only used half of the corn that the recipe called for.

using "processed cheese" no taste at all and it was bland. If I try this again, I'll have to use a med sharp or sharp chse. I parboiled pasta....wasn't sure it would thoroughly cook as directed in receipe.

Was easy to cook and my husband loved it. I gage things by if he goes back for seconds and this time he did. Simple enough that you could add other veggies if you wanted, for instance red pepper.
