Ingredients

box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix
1/2
cup Green Giant® frozen corn
1/4
cup mayonnaise
1/4
cup barbecue sauce
2
cups shredded rotisserie chicken
1
cup cherry or grape tomatoes, halved
12
butter lettuce leaves
4
medium green onions, chopped (1/4 cup)

Directions

  • 1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally, adding corn during last 2 minutes of cooking.
  • 2 Drain pasta and corn; rinse with cold water. Shake to drain well.
  • 3 In large bowl, stir together Seasoning mix, mayonnaise and barbecue sauce. Stir in pasta, corn, chicken and tomatoes. Line serving plate with lettuce leaves. Top with salad mixture; sprinkle with green onions. Serve immediately, or cover and refrigerate 1 hour to chill.

Love, love, love this salad! I add extra veggies that I have on hand and some crumbled bacon and this always gets devoured!! I highly recommend trying this out! I serve this all by it's self as a meal quite often because it is simple, quick, and kid friendly. I have three year old triplets and they are quite unpredictable and picky with their eating and they pig out on this every time I make it!!

Family really enjoyed! Only problem I had was I have a family member watching calories and the amount in a serving is not listed.
