The pork was very tender and went well with the herb rub. The sweet potatoes and parsnips did not stand up to the slow cooker and were so soft, I ended up mashing them. The garlic became very soft and I ended up including the garlic in the sweet vegetable puree. Not bad but I think next time I'll use white potatoes and carrots. White potatoes go better with garlic and the herb mixture. The sweet and savory combination did nothing for us.
