Really good.. I used boneless skinless breast instead of the thighs.. very tender and juicy but I didn't have instant rice.. i tried to use brown rice.. NOPE don't do it! Terrible idea. next time I'm just going to make the rice and then add it to juices. But, good flavor and juicyyyy. :)

The texture of the chicken was good. (I used boneless thighs.) The rice was soupy. The flavor was a little blah for me.

YUMMMM!! I used chicken breast instead of thighs, I actually liked that it fell apart into somewhat shredded texture. Everyone loved it. It was light, yet filling. However, next time, I will probably double it. Didn't really get 6 servings out of it. And a little more flavor to the chicken wouldn't hurt, but the fall apart texture of the chicken went well with the flavorful rice getting spoonfuls of chicken and rice!

This was a thumbs down from my family. The chicken had no flavor - it tasted boiled. I didn't even want to think about how I could change up the recipe to make it better. Won't cook this again.

My family loved this dish. I used Chicken breast instead of thighs. I added poltry seasoning and seasoned it with rosemary sea salt. I eyeballed the rice and it came out a little wet, but very very good. I would recomend this for the busy work week. I am filing this dish under tried and true keepers.

This was absolutely delicious, but instead of lime, I used lemon and I also added a little bit more lemon juice than the recipe called for. The rice was delicious also after cooking in the juices! This was definitely a big hit in my house!!

This recipe is pretty awesome with a couple modifications. First, zest either one or two of the limes in addition to the lime juice. It adds some serious flavor without being over the top. Second, I like to use jasmine rice, but in order to have it fully cooked, I put it in an hour before the recipe is done. Also, use chicken thighs with the skin and add a dash of salt when you add the other spices. This recipe is something that I make once or twice a week because my boyfriend and me can't get enough of it. Give the recipe another fair shake with the changes and I'm pretty sure you'll find it as awesome as I do.

This recipe was TERRIBLE!!!! It had NO flavor, chicken was bland at best and the rice seemed to absorb every bit of lime. It was absolutely an embarrassment to serve, and it was only for myself, husband, and son. We took a few bites and threw the rest out, what a waste!! Will NEVER EVER make this again. And I'm not sure how this got a good rating but in my book it does not deserve anything more than what I gave it...and that was the lowest I could give it!!

I made this a couple nights ago for some friends. It was very good. Everyone raved about the taste, both sweet and sour at the same time. I substituted breast for thigh and it still tasted great, although the thigh would have been juicier.

Made this during the week with thighs as called for in the recipe. I usually keep boneless breasts on hand just for convenience but was very happy with how the thighs turned out, juicy and flavorful. The meat falls right off the bone. We prefer "real" rice to instant so I put some of the cooking liquid from the crock pot into my rice cooker. Next time I would probably just scoop out the cooked rice into the crock pot and let it absorb more liquid for 15 minutes or so. This was an excellent crock pot chicken recipe and I plan on making it again w/ some of the suggestions here (lemon, mushrooms, brown rice).
