I LOVE this recipe! It is so yummy and hearty. I add a handful of garlic cloves (bought in bulk) and use dried mushrooms (also bought in bulk!) but put them in at the beginning so they rehydrate. I also didn't have carrots so I just added more zucchini and it's still delicious. Others are right, it's more of a stew. For me, the lentils break up so it makes it more like a roux base, hence the stew-ness.

Because of work, I had to cook this longer than the stated time. It was alright but my lentils weren't cooked as much as I would have liked, my carrots were perfectly cooked, and my zucchini was overcooked. No one else had this issue?

I have been making this soup for about a year. We make it during Lent without the chicken and with the chicken throughout the rest of the year. I do cheat a little too. I use can chicken to cut down on the prep and cook time. We have added garlic and onions to the receipe too. It is wonderful!!

This was a great soup, almost more of a stew. Everyone loved it. I served it with some biscuits. If you want more of a soup, I would suggest adding more broth. I think next time I will add some garlic and onion, and maybe some Italian seasoning, just to give the overall flavor more of a pop.

This was probably the best soup I have ever eaten outside of the Olive Garden! I substituted chicken breast for the thighs. I also added minced garlic and italian seasoning while it was cooking. Wonderful!

This recipe is DIVINE! I use frozen boneless-skinless chicken thighs and 3 medium-sized zucchinis when I make it since the zucchini will just soak up the taste of the chicken broth for the most part, it's not overpowering. At the end I add the fresh basil and I sprinkle my bowl of soup liberally with the parmesan cheese. It is seriously one of the best soup recipes out there. I've even made it for potlucks and there's never any left to bring home. YUM! Two thumbs up!!

This was delicious!!! My entire family of hungary, picky eaters loved it. I did not use the Zucchini that the recipe called for. I used extra mushrooms,one red chili pepper (intact) and chili seasoning, for more of a kick, and poured the soup over noodles just before serving. I also added chopped avacado to the recipe. Next time I will add more Lentel beans but on the whole this was a great, very filling recipe!!!!
