Slow Cooker Country French Beef Stew

I liked this stew, but felt the bacon was pointless in the slow cooker. It lost its flavor and I couldn't taste it in the finished stew. The red wine brought such a nice flavor to the dish and the sun-dried tomatoes were a delicious addition. I ate it over noodles and brown rice and it was great with both.

I think this is a great recipe as is. Stew comes out great. Everyone loves it when I make it and it tastes even better for leftovers!

This was a hit with the family, but I made some changes. I used a splash of balsalmic vinegar and browned the beef in bacon fat, but did not put bacon in the stew. I used fresh herbs for better flavor as well :)
