We have tried this recipe twice and it's now a family favorite. We use our own personal favorite salsa, and we tried it once with colby jack cheese (which I think I liked better), and it's just an all-around good meal. We make it with Mango Sticky Rice on the side (my version is 1 chopped mango (or two, if they're on sale. Can't have too much mango), 2 cups of cooked jasmine rice, and 1 can of sweetened, condensed milk. 1/3 c. of sugar optional. Mix it all together and you've got one amazing side that goes with so many things. If you haven't tried this Santa Fe Grilled Chicken recipe, you really should. Make some Mango Sticky Rice on the side and you've got one awesome meal.
