Salmon Loaf

Ingredients

14.5 oz can salmon
2
eggs (beaten)
1
tablespoon lemon juice
2
tablespoons butter
1/3
cup minced onion
1
cup cracker crumbs
1 1/2
teaspoons Dijon mustard
1/2
cup milk
salt and pepper to taste

Directions

  • 1 Preheat oven to 350 degrees.
  • 2 Mince onion. Melt one tablespoon butter to mix in the loaf. Save the other tablespoon to grease the loaf pan.
  • 3 Mix the salmon, eggs, 1 tablespoon melted butter, onions, cracker crumbs, Dijon mustard, and milk. Add lemon juice. Mix in salt and pepper to taste.
  • 4 Grease a 9x5 inch loaf pan with the remaining tablespoon of butter. Pour salmon mixture in and press into pan.
  • 5 Bake at 350 degrees for 45 minutes or until done.
