I also did not have any baby carrots, so I cut regular carrots to the same length and size. This is a nice oven recipe to use when you are roasting meat or poultry, as you can cook them at the same time. The carrots are simple, attractive, and tasty.

I didn't have baby carrots, so I used whole carrots cut into 4ths. It only took half the time to cook, and they were the perfect consistency of tender and browning. Color equals flavor!
