These turned out great. I changed things up a little, skipping the lettuce (I'm not much of a lettuce fan), used cheddar cheese instead of Monterey Jack, and I added sour cream, spreading in on top of the filling before I added the cheese. I also popped them in the oven for a couple of minutes because I like my tortillas a little more crisp. Very good! I think I would like to add a little something else to the filling to give it a little more oomph, but overall these were still great, and VERY easy and quick to fix.

To make this recipe even healthier try using fat free refried beans. I like the ones with green chilies. I also use fat free sour cream, a little low fat cheese, and some type of healthy wrap instead of flour. Yummy.

This recipe is very quick and easy. I personally recommend adding sour cream and tomatoes to the "roll-up"

I look after my kids I have to look after my kids and they get louder when they are hungry I whipped up the Refried Bean Roll-Up and they actullay got quiet and took a nap
