The cocoa and buttermilk turn the white cake mix into a red velvet layer and a blue velvet layer. The cream cheese frosting is to make this taste like a Red Velvet cake and it does. What a great idea!

What is the cocoa added for? Also, wouldn't whipped cream alone be easier than the cream cheese mixture?

To cut down on ingredients I used store bought whipped topping for the filling and it worked great. I added sliced strawberries and blueberries between the layers of cake. I omitted the cocoa because the cake was deliciously moist and didn't need any extra flavoring. Also, I assembled the cake in red, white and blue from the bottom of the bowl upwards. This is a great family dessert.

This trifle is certainly a beautiful display, but I was disappointed with the taste. First off, the cream cheese was much too thick to spread over the cake layers. Second, the layers really didn't "meld" together like trifles should, even though I let it sit 24 hours before consuming. Definitely pretty but not excellent taste.
