pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/3
cup butter or margarine, softened
2
tablespoons Gold Medal® all-purpose flour
1
teaspoon almond extract
1
egg
1/2
cup seedless raspberry jam
  • 1 Heat oven to 350°F. Spray bottom of 8-inch square pan with cooking spray.
  • 2 In large bowl, stir cookie mix, butter, flour, almond extract and egg until dough forms. Press half of dough into bottom of pan; bake 15 minutes. Spread jam over base. Crumble remaining dough over jam.
  • 3 Bake 20 to 25 minutes or until golden brown. Cool completely, about 2 hours. For bars, cut into 5 rows by 5 rows.

Expert Tips

Try apricot, blackberry or strawberry jam for the raspberry.

Easy and delicious dessert bar. We didn't think they were too sweet but everyone has different tastes. Thanks, reviewers, for the brown sugar and cinnamon topping idea. Made the bars that much better. I had raspberry jam to use but any filling you like would compliment the sugar cookie crust nicely.

Super easy and yummy!!!! I took the advice of other reviewers: 1) Substituted Cherry Pie Filling for Jam, to cut the sweetness 2) Added 1/8 c. brown sugar and 3/4 t. Cinnamon to the topping crust. Will definitely make again. As an aside, I used my Ultimate Brownie Pan to make these and it worked perfectly, making perfect squares.

Everyone's new X'mas favorite. I never used a packaged mix before, but I had a coupon and decided to try it. I used a berry blend fruit spread because I had it on hand. I will definitely make again. I also discovered that the streusel made a good topping for Dutch Apple pie.
