I didn't have the pound cake mix so I made Flo Breaker's Pound Cake from the Joy of Cooking; and I used leftover candied sweet potatoes instead of plain puree. I subtracted 1 egg and 1/3 of a cup of sugar to compensate for the sweetened potatoes. This cake is amazing; very subtly scented and flavored and the cream cheese frosting is, pardon the expression, the "icing on the cake". Incredible flavor; worth every second of work.

Family loved it and friends too. I added a bit of sugar though to the batter though. I love sweet potatoe pumpkin pie my mom makes every thanksgiving. im going to add the same dose in pumpkin too. Its going to taste great..will leave a post when i do:)..

Instead of cooked sweet potato, I added a cup of grated sweet potato as you would do with grated carrots for carrot cake. My son thought it WAS carrot cake until he tasted it and gave his seal of approval. Next, I'll try adding chopped cranberries...

Yummy! It also tastes great with pecans mixed into the batter. My husband liked it with chocolate frosting on top instead of cream cheese frosting.
