Eat cake instead of pumpkin pie! Made easier with a cake mix and baked in a pan everyone has, this dessert feeds a crowd!

This was a terrible recipe. The cake mix on the top was all dry and ruined the whole dessert. I don't see how anyone could enjoy this one!!

The 1st time I made this I followed the recipe exactly and although tasting good, the pumpkin custard was not firm enough for me...it made cutting and plating difficult and the whole box of dried cake mix was bit much. 2nd time, I made these 2 easy alterations: instead of 1 cup of white sugar, I used 1/2 cup each white and light brown; and I took 1/2 cup of the spice cake mix and added it to the pumpkin custard, using the remainder on top of the pumpkin mixture. This alteration cleared up both problems: got rid of the extra dried cake mix on top, and tightened up the pumpkin custard so it held its shape for cutting and plating. Served it yesterday for Thanksgiving and all loved it, no leftovers !!

This is one of my absolute favorite recipes ever. It is so much better than plain pumpkin pie, which seems much too heavy and rather tasteless. It is one of those recipes that gets requested again and again. The best part is that it is so easy and can be prepared ahead of time.

Everytime I serve this dessert at a gathering I have several requests for the recipe. I made it for my office Thanksgiving potluck and it was a huge hit. I love the combination of pumpkin and nuts. I always use spice cake mix and don't use the whole bag as it gets a little heavy on top. It's easy to make ahead of time and can be served at room temperature or cold. I also cut it into 15 servings not 12.

I made this a month before thanksgiving to test it out for our thanksgiving dessert, well it was such a sucess that I posted it on Facebook to share it with my friends. One friend who saw it on facebook also baked it just before thanksgiving and liked it so much she also took it to a family thanksgiving dinner and has now shared the recipe with a number of people. This recipe is a keeper. It is so easy to make, I just baked it again today and did not have any pecans so used walnuts instead and it is just as goood.

Can't say enough!! HUGE hit anywhere I take it. I found that an entire box of cake mix was a bit much so I only use a little more than half on top of my dessert. Spice cake seems to win in my house for the topping of choice. I also finely chopped a portion of the pecans so that they cook in to the batter a bit. Enjoy!!
