This recipe comes out really well using vegetarian "ground beef" crumbles. We usually double the recipe and use cheddar cheese, some diced green peppers, and minced onion. It's good with or without the taco seasoning and chips.

I found this recipe years ago in a magazine and lost it recently, so I looked it up. Here are my variations: I also add a packet of mild taco seasoning (instead of taco-flavored cheese), a small can of mexicorn, and a small can of sliced olives. I serve the tortilla chips on the side along with fat free sour cream. My family eats this up every time! A quick, easy favorite.

I found this recipe while trying to figure out what to make with the same stuff I use constantly. My family really liked it. I only made 1 box of potatoes and I also used the salsa cheese. That was the best suggestion from someone else on here. It added to much flavor to it. The next time I make this I will probably triple the recipe so that there is alot more to eat.

Love this recipe!!! My husband loved it as well. I always try new recipes without him and if I think they are great I will make them for him. HE LOVED IT! And asked me can we have it tomorrow too! :)

A simple recipe that takes little time to prepare and is very good. It does need to cook a little longer in the oven and needs the shredded cheese or it would be very bland. I have to double the recipe for my family and every bit of it is cleaned up as it is. But I love the idea of adding taco meat to it, will be trying that variation next!

Totally screwed up the liquid measurements of the recipe (with the help of a 3yr old)and it was still very YUMMY! I My husband and daughter were fighting over the last spoonful!
