We always had left over mashed potatoes to strech and use mom would makecheese chunks these witha filling of chunks of ham or chicken or bacon you scoop up the cheese and meat chunks in a round of ball mashed potatoes you add the eggs and all in and flatten into thin cakes with the hash browns on the outside and fry in oils peanut oil is the best but any will fry then seat on paper towels to drain off excess oil til crunchy flatter the faster they cook leave out the onions and in the eggoney and make like flat cakes of potato add more boiled mashed potato for texture and fry them crisp they all get eat topped with applebutter or jams and powder sugar or honey try them on sundays when you have time and left over mashed potatoes. noithing went to waste specially food old buttery mashed potatoes. potato latkas moms way were always special and food left over add some new ingredients you fot a whole new food yum.
