small new potatoes (1 1/2 pounds)

cup sour cream
Dill weed sprigs or chopped fresh chives
  • 1 Heat 1 inch water to boiling in 3-quart saucepan. Add potatoes. Cover and heat to boiling; reduce heat. Simmer 20 to 25 minutes or until tender; drain and cool.
  • 2 Cut potatoes in half; place cut sides up on serving tray. (Cut thin slice from bottom of each potato half, if necessary, to help stand upright.) Top each potato half with 1 teaspoon sour cream and dill weed. Cover and refrigerate about 2 hours or until chilled.

I had never seen these at any party and was eager to try them. Last minute I decided to make them them with a potato chip dip of sour cream, grated cheddar and southwest spices. They were great. I dipped out a little hole like mentioned above - which by the way was easier than I expected. I think most any potato chip dip would be good with these instead of just sour cream. I will try different flavors for different occasions. I took these to an outdoor party and served them cold. My bag of potatoes had some that were too large and I used the ends off those. Don't boil your potatoes too long or the skins will break. I will for sure make these again.

These were great! Easy, different and everyone loved them. I found that if after cutting them in half, by just spooning-out a little dip in the potato, and plopping the mixture in that - it worked perfect. I liked the "bite-size" effect and used pretty small red potatoes. I jazzed up the mixture I used for the top, with a mix of sour cream, cream cheese, crushed garlic, finely chopped onion, parsley, salt and pepper, and some with a little finely shredded cheese. then sprinkled the tops with a few finely chopped green onions instead of dill sprigs. Yum, they went quickly. Great recipe - quick, easy, yummy.
