From Betty's Soul Food Collection... Mmm! No-muss, no-fuss, delicious chicken that's "fried" in your oven.

I MADE THIS LAST NIGHT AND MY HUSBAND & SON REALLY LIKED IT. I THOUGHT IT WAS PRETTY GOOD BUT WASN'T OVERLY IMPRESSED. I USED BONELESS, SKINLESS CHICKEN BREASTS. THE BREADING STUCK TO THE BOTTOM OF MY GLASS DISH WHEN I TRIED TO REMOVE THE CHICKEN AND LIKE THE REVIEW BELOW MINE, IT DIDN'T LOOK ANYTHING LIKE THE PIC. I GIVE IT 4 SPOONS BECAUSE MY FAMILY LIKED THE TASTE SO MUCH. WILL MAKE THIS RECIPE AGAIN BUT WILL TRY SOME SORT OF MODIFICATION TO HELP WITH THE BREADING. I'M ALSO GOING TO TRY THE OVEN FRIED PICNIC CHICKEN TO SEE IF IT IS BETTER.

Dry mixture turned into crumbs after dipping chicken, breading broke apart upon turning chicken over because the bottom was verry soggy while the top appeared done. And my chicken looks nothing like the picture thats advertised.

Made this on the weekend; turned out great. So good, in fact, my husband thought it WAS fried! I added too much cayenne pepper, so it was a bit spicy for the kids. But overall, very juicy.

I made this the other night, the family loved it. Even our picky eater asked for more. I didn't have buttermilk and used regular milk (without the lemon or vinegar) and it was still amazing. I did add buttermilk to our shopping list so we could try it the way it is intended to be =) can't wait for Saturday.

I marinated the chicken (I used thighs) all day and my guys LOVED this recipe. It's a keeper they said! I pulled off the skin and used buttermilk made from powder buttermilk. It all worked well for me.

This is the best (fried)chicken ever. You don't have to worry about the extra fat or grease.

The chicken was good, but I think it would have been just as good if the ranch dressing had been omitted and just use the buttermilk as a marinade.

OK, even though it tasted good, I probably shouldn't rate or comment until I try it again. I didn't marinate the chicken as long as it said. Forgot to allow the time for it actually. I believe that on my next try, I will marinate it over night. When I do, I will be back to rate it. It didn't look so good coming out of the oven but the taste was nice and my family liked it.

This was a recipe that everybody liked. It's really delicious. Corn bread gives it a very unique flavor.

How can you say a recipe tasted bad if you admittedly didn't follow any of the instructions? It's people like that that make me leery of leaving reviews. However, this recipe is great. I tried the hot sauce suggestion below and it was absolutely delicious! Will definitely make this again.
